Ingredients
Serves: 8
250g plain flour
100g caster sugar
225g unsalted butter
1 teaspoon vanilla extract
1 egg yolk
juice of 1/2 a lemon
300g jam of your choice


Preparation method
Prep: 50 mins | Cook: 30 mins | Extra time: 30 mins, cooling
1. Combine the flour and sugar. Rub in the butter. Add the vanilla, egg yolk and lemon juice. Work together into a ball, adding 1 tablespoon of water to combine (only if necessary). Allow the pastry to rest for 20 minutes. Meanwhile, preheat the oven to 180 C / Gas 4.
2. Press half of the pastry into the bottom of a 20cm square baking tin. Spread the jam over the top of the pastry. Take the remaining pastry and roll pieces into ropes. Take the ropes to make a lattice pattern on top of the jam.
3. Bake in the preheated oven for 30 minutes, or until pastry is golden. Allow to cool before cutting and serving.

Unicorn Poop Cookies

Ingredients

1/2 cup butter, softened
1/2 cup shortening
50 gram cream cheese, softened
1/2 teaspoon salt
1 whole egg
1/2 teaspoon almond extract
2 cup all purpose flour

How to make it

Combine butter, shortening and cream cheese in a large bowl, beat together until smooth.
Add sugar and salt.
Beat until combined.
Beat in egg and almond extract until combined and gradually add the flour beating until combined.
Form dough into a ball with your hands and then into a log shape, divide the log shape into six portions (or how ever many colors you want).
Place each portion of dough into individual bowls and tint the dough different colors.
Chill tinted dough in the refrigerator 1 hour or freezer 15-20 minutes.
Divide each tinted chilled dough ball into 8 equal pieces.
Take one piece of each color dough ( leaving the rest in the fridge while you work) and roll out like a rope or snake on your counter-top.
If you use a piece of waxed paper on the counter, you shouldn't have to add any flour.
Roll the rope shape to about 6 inches long.
Continue rolling all the colors and stacking them into a pile.
Gently press the ropes together and roll the large multicolored "rope" on the counter to round and smooth it and if desired to lengthen it to 10 to 12".
Cut the multicolored "rope" into two pieces, using both hands, roll with your palms in different directions on both end of the rope pieces to twist it gently.
Coil the rope into a poop shape, using your imagination as to what you think unicorn poop should look like
Press in some silver candy balls (dragee) into the dough pieces to decorate if desired.
Place dough on greased cookie sheet (or one covered with parchment or silicone mat) and bake at 375F for 8-10 minutes until cookies are set and bottoms are light brown, they will not spread very much.
Cool on wire rack.
Coat with sparkle gel and/or disco dust to give them some sparkle and add some sprinkles to the still wet gel for more texture.

Ingredients
1-¾ teaspoons salt, divided
4 russet potatoes (8 ounces each; 2 pounds total), peeled
Olive oil spray
2-1 ⁄2 tablespoons egg substitute
1-1 ⁄2 tablespoons unbleached or all-purpose flour
2 teaspoons paprika
1 ⁄4 teaspoon cayenne
1 ⁄8 teaspoon garlic powder
1 ⁄8 teaspoon onion powder
Directions
Bring a large pot of water to a boil over high heat. Add 1 teaspoon salt.
Meanwhile, with a twin curl cutter, cut 7 ounces of potato curls, about 2 cups. (Cover with water and refrigerate the scraps for another recipe.) Preheat the oven to 450°F. Lightly mist a small nonstick baking sheet with oil spray. Set aside.
Transfer the potato curls to the boiling water. Cook for exactly 3 minutes but no longer or they will break. Drain in a colander. Set aside for about 5 minutes to cool.
Meanwhile, in a large mixing bowl, combine the egg substitute, flour, paprika, cayenne, garlic powder, onion powder, and the remaining 3⁄4 teaspoon salt. With a fork, mix until well blended. Add the potatoes. Toss them with your fingers until they are coated with the seasoning mixture. Transfer, allowing any excess seasoning mixture to drip off, to the reserved baking sheet. Arrange the potatoes, not touching, in a single layer. Lightly mist with oil spray. Bake for 18 to 24 minutes, turning them about halfway through, until crisp and cooked through.

Don’t have the time (or patience) to curl the fries? Simply cut 7 ounces (about 2 cups) of 1/4″-thick potato sticks using a regular chef’s knife. Prepare according to recipe directions.

Sloppy joes

Original recipe makes 6 servings

1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste


Directions

In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.

Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper.
